Le quart pour cinq sous..!&rsquo;)<br \/> Ce m\u00e9tier, tenu par des charretiers ambulants, jamais les m\u00eames, prolif\u00e9rait \u00e0 l&rsquo;approche de l&rsquo;\u00e9t\u00e9. Il figurait, en bonne partie, dans le d\u00e9cor de nos villes de province.<\/p>\n<p> Les marchands de figues poussaient devant eux soit une charrette ou tout simplement une brouette de ce &lsquo;fruit \u00e0 grains&rsquo;, destines plus prosa\u00efquement \u00e0 l&rsquo;alimentation des \u00e2nes et mules.<\/p>\n<p> La gente humaine tunisoise y prit go\u00fbt et s&rsquo;en reput jusqu&rsquo;\u00e0 s&rsquo;en assouvir. Il y avait les figues rouges et vertes. Des grosses et des petites.<\/p>\n<p> Le vendeur, debout, muni d&rsquo;un couteau ou d&rsquo;un canif bien aiguis\u00e9 nous servait, \u00e0 l&rsquo;arr\u00eat, un quart ou plus, \u00e0 consommer sur place. Sans gant de protection, il choisissait selon son int\u00e9r\u00eat, la pi\u00e8ce \u00e0 d\u00e9couper, parfois le choix \u00e9tait fait par le client, ce qui soulevait souvent quelques remarques du genre &lsquo;Chnou\u00e8 t\u00e8khtar ken \u00e9l kbir\u2026.?&rsquo; (&lsquo;..Tu choisis que les plus grosses\u2026.? &lsquo; ) Le marchandage \u00e9tait de rigueur.<\/p>\n<p> Il op\u00e9rait de la fa\u00e7on suivante. Il cicatrisait l\u00e9g\u00e8rement l&rsquo;\u00e9corce \u00e9paisse une premi\u00e8re fois en son milieu, en prenant soin de ne pas \u00e9gratigner la pulpe puis, \u00e9t\u00eater les deux extr\u00e9mit\u00e9s pour laisser appara\u00eetre cette derni\u00e8re, g\u00e9n\u00e9ralement de couleur jaune, variol\u00e9e par les &lsquo;p\u00e9pins&rsquo; ou rouge\/violet, l&rsquo;\u00e9corce, toujours coll\u00e9e mais fendue etait ouverte comme une rose \u00e9close.
