Militant des produits de nos terroirs face aux ravages de la malbouffe, il a en effet retrouv\u00e9 des recettes de boutargue \u00e0 l\u2019ancienne et les a remises au go\u00fbt du jour.<\/p>\n<p>Utilisant des \u0153ufs de poissons en provenance des eaux vives de Bizerte, Omar Lasram a retrouv\u00e9 tout ce qui faisait la sp\u00e9cificit\u00e9 de la boutargue tunisienne.Ainsi, utilise-t-il des m\u00e9thodes de salage traditionnelles pour conserver au mieux sa boutargue.<\/p>\n<p>De m\u00eame, proc\u00e9dant \u00e0 un affinage \u00e0 l\u2019ombre, il parvient \u00e0 pr\u00e9server toutes les saveurs et laisse le produit final lentement arriver \u00e0 maturation.<\/p>\n<p>Enfin, selon un savoir-faire ancestral, il laisse le temps qu\u2019il faut au s\u00e9chage et obtient des boutargues d\u2019une fra\u00eecheur \u00e9tonnante.<\/p>\n<p>Portant ce produit \u00e0 bout de bras, Lasram s\u2019impose aujourd\u2019hui comme la r\u00e9f\u00e9rence dans ce domaine ardu de la production artisanale de la boutargue.<\/p>\n<p>Dans son atelier, il pr\u00e9pare des boutargues au go\u00fbt de madeleines proustiennes et ressuscite un art de faire oubli\u00e9 ou d\u00e9laiss\u00e9 car trop complexe et n\u00e9cessitant du temps.<\/p>\n<p>Ce faisant, il parvient \u00e0 rendre ses lettres de noblesse \u00e0 la boutargue, devenue le produit phare de l\u2019\u00e9picerie fine qu\u2019il a cr\u00e9\u00e9e au Kram.<\/p>\n<p>Tr\u00e8s recherch\u00e9e, fort appr\u00e9ci\u00e9e, la boutargue Cacciola est quasiment devenue son produit signature, sa partition estampill\u00e9e maison.<\/p>\n<p>Le ma\u00eetre des c\u00e9ans ne badine pas avec la boutargue.
