Ceux qu\u2019on aime d\u00e9guster au coin du feu, \u00e0 la table de Chabbat ou bien entre amis.&nbsp;<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Ceux qui r\u00e9chauffent le c\u0153ur autant que le corps : ces plats de la cuisine s\u00e9farade qu\u2019on aime tant, ceux d&rsquo;Alg\u00e9rie si envo\u00fbtants.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Aujourd\u2019hui, laissez-moi vous compter<strong> la loubia d\u2019Oran et d\u2019Alger<\/strong>, celle de mon arri\u00e8re-grand-m\u00e8re, de ma grand-m\u00e8re et de ma m\u00e8re (\u00e7a fait du monde !).<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Trois g\u00e9n\u00e9rations, si ce n\u2019est plus, qui ont r\u00e9gal\u00e9 les palais de toute une famille. Ce plat a l\u2019allure de rago\u00fbt, qui n&rsquo;a pas toujours l&rsquo;air app\u00e9tissant, est en v\u00e9rit\u00e9 une v\u00e9ritable ode \u00e0 la gastronomie.&nbsp;<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Compos\u00e9e de plate c\u00f4te et de jarret de b\u0153uf, accompagn\u00e9e de fameux haricots blancs, d\u2019un peu d\u2019huile, de paprika, d\u2019ail et de cumin, la loubia ne se d\u00e9crit pas, elle se d\u00e9guste.&nbsp;<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Cuite en cocotte presque 50 minutes, elle aime se faire d\u00e9sirer. Certains la mangeront avec de la graine de couscous, les puristes, eux, feront sans.&nbsp;<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">La loubia est une invitation \u00e0 la gourmandise, une v\u00e9ritable plong\u00e9e dans l\u2019histoire des juifs du Maghreb.&nbsp;<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><strong>Recette :&nbsp;<\/strong><\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">1. Mettre dans une cocotte minute l\u2019huile, l\u2019oignon coup\u00e9 en lamelles, la t\u00eate d\u2019ail rinc\u00e9e, la viande, les haricots, la branche de c\u00e8leri rinc\u00e9e et coup\u00e9e, le paprika, le sel et le poivre.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">2. Couvrir la viande d\u2019eau, fermer la cocotte et la mettre \u00e0 grand feu.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">3. D\u00e8s que la cocotte siffle, baisser le feu.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">4. Laisser cuire 40 min environ puis ouvrir la cocotte et v\u00e9rifier la cuisson de la viande.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">5. V\u00e9rifier s\u2019il manque un peu d\u2019eau, et laisser la cocotte \u00e0 grand feu 10 min sans le couvercle pour que la loubia r\u00e9duise un peu et que les haricots l\u00e2chent leurs amidons ; le jus sera plus onctueux.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">6.
