Situ\u00e9 sur la grande avenue BOURGUIBA, face \u00e0 la librairie LA FEN\u00caTRE.<\/p>\n<p>J\u2019\u00e9tais son jeune et fid\u00e8le client, pour 5 millimes, j\u2019avais un petit cornet de pois chiches grill\u00e9s, bien brunis envelopp\u00e9s dans une FERTOUNA ( cornet), un bout de papier journal qui a fini d\u2019\u00eatre d\u2019actualit\u00e9. Je le voyais souvent \u00e0 la man\u0153uvre, tourner sa denr\u00e9e, avec une sorte d\u2019instrument rond, sans discontinuer. Il avait un grand bac, dans lequel ses pois chiches crus, cuisaient lentement, sous un feu doux.<\/p>\n<p>Bien adroitement, <a href=\"https:\/\/fr.royalvegascasino.com\/blog\/les-grands-chefs-les-plus-celebres\/\">il refermait les deux extr\u00e9mit\u00e9s<\/a> et me le servait en me disant \u2018&#8230;Mezelou skrhren, kherjou me tbaq) \u2019 ( ils sont est encore chauds, tout droit sortis du bac, TENJRAA.).<\/p>\n<p>J\u2019avais dans ma main, ce petit entonnoir rempli de grains dor\u00e9s, parfois l\u00e9g\u00e8rement br\u00fbl\u00e9s, qui chauffait ma paume, et j\u2019attendais de faire qqs pas, pour commencer \u00e0 croquer ce que j\u2019aime encore, les pois chiches grill\u00e9s.<\/p>\n<p>J\u2019avais pris l\u2019habitude de faire durer le plaisir. J\u2019engouffrais dans mon palais, trois ou quatre grains, et pour d\u00e9guster cette petite p\u00e2te bien saliv\u00e9e, je la ressortais de ma bouche, pour mieux l\u2019appr\u00e9cier par petites doses, un rappel de mon enfance lorsque maman, alors que je n\u2019avais pas encore de dents, m\u00e2chouillait la mie de pain en me disant \u2018\u2026.Qoul el nein\u00e9 ( mange cette nourriture) NEINE, c\u2019\u00e9tait ce qu\u2019elle me disait et je m\u00e2chais par petites portions cette mie de pain, sortie par la bouche de maman.<\/p>\n<p>Je prolongeais ainsi le kif, ce kif qui donnait \u00e0 mon parcours, l\u2019envie de faire durer le plaisir. Lorsque j\u2019arrivais \u00e0 la fin du cornet, je cherchais encore si qqs grains ne s\u2019\u00e9taient pas cach\u00e9s au fond du cornet. Mais comme tout \u00e0 une fin, le plaisir ne dure que le temps, d\u2019un parcours, celui d\u2019un jeune \u00e9colier f\u00e9ru de pois chiches. Plus tard, je prenais le grand cornet, \u00e0 10 millimes, je doublais ainsi mon kif d\u2019enfant qu\u2019un petit rien rendait heureux.<\/p>\n<p>Puis un jour, l\u2019\u00e9choppe ferma, et ma d\u00e9ception fut grande\u2026.Sauf qu\u2019un autre marchand, situ\u00e9 sur l\u2019avenue FRANKLIN ROOSEVELT, face au BILLARD Hassan, prit la rel\u00e8ve, mais il n\u2019\u00e9tait pas sur mon parcours d\u2019\u00e9colier, et je devais faire un petit d\u00e9tour pour retrouver mes graines d\u2019or.<\/p>\n<p>L\u2019odeur des pois chiches grill\u00e9s est rest\u00e9e clo\u00eetr\u00e9e dans mes narines, et son go\u00fbt l\u00e9g\u00e8rement sal\u00e9 dans mon palais.<\/p>\n<p>Des ann\u00e9es plus tard, j\u2019ai repris la m\u00e2chouille des pois chiches \u00e0 Paris, emball\u00e9s dans des sachets en plastic, froids et qui ne rassemblent en rien \u00e0 ceux que j\u2019ai connu, aim\u00e9 et appr\u00e9ci\u00e9.<\/p>\n<p>&nbsp;<\/p>\n<p>Albert Simeoni<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Le cornet de pois chiches grill\u00e9s, par Albert Simeoni Ce n\u2019\u00e9tait pas grand-chose dans mon jeune age mais voil\u00e0 que souvent sur le retour du chemin de l\u2019\u00e9cole, je m\u2019arr\u00eatais devant le HAMAS,( marchand de pois chiches grill\u00e9s) qui g\u00e9rait sa petite industrie artisanale avec bcp de passion.
